The only thing that Sharp gem changes is the DEX scaling. It increases the DEX scaling so that you do even more damage by leveling DEX. In case of Sellsword Twinblades the DEX scaling changes from A to S.Sellsword gets more AR, but Wardens outdamage them vs foes weak to bleed. So short answer both. Wardens is probably the better if you have to chose between the two, since the minor drop in AR isn't that notable but the bleed is definitely an improvement when it happens. Dancers is the way to go. Already use them. Good for stunlocking players and humanoid enemies, but are a lot slower and have shorter range in comparison to sellsword twinblades.
